An entire pie for less than 900 CALORIES.



I made it my goal to get through the holidays the same weight that I went in. Success? Yes. The reason why? The following recipe I am about to share with you for pumpkin pie.

A typical piece of pumpkin pie has about 330 calories. But lets be honest, who eat just one slice? Not me. I took a recipe from hungry girl for pumpkin pie and tweaked it a bit to cut the calories by another 200. The grand total for the WHOLE PIE? 880 calories. With nutritional this low and all natural/healthy ingredients, why not eat half the pie (~440 cal.) and not feel guilty about it? Did I do this? Let's just say I've probably eaten about 1 pie in the last day and a half.

You will need:
For the crust:
1.5 cups Fiber cereal (I use Trader Joe's fiber cereal: it packs 8 g. fiber per 2/3 cup + there's no artificial sweeteners)
3 tbsp light butter (I use bummel and brown)
2 tsp cinnamon
1 packet stevia (I use Trader Joe's)

For the filling:
One 15-oz can of canned pumpkin
1/2 can or 3/4 cup fat free-evaporated milk
3/4 cup almond milk
1/2 cup egg whites
2 tbsp pumpkin pie spice
1 tbsp + 2 tsp brown sugar
1 tbsp honey
5 packets stevia
1/4 tsp salt

1. Put fiber one cereal in food processor and blend under very fine.
2. Melt 3 tbsp in microwave for about 20 seconds and add about 2 tbsp water
3. Pour butter/water mixture into crushed fiber cereal
4. Take an 8-9 inch baking pan and flatten cereal to make crust
5. Mix filling ingredients together
6. Pour into crust
7. Bake at 400 degrees for about 40-45 minutes
8. Let sit in fridge until firm (or if you're like me, put it in the freezer so you can eat it a LOT SOONER!).
