Flax banana muffins: A way to get a serving of fruit and bring on a poo...sorry, but its the truth.
You will need: (makes about 6-8 muffins)
1 cup whole wheat flour
1/2 cup oats
5 packets stevia + 1 tbsp agave nectar (or 1/4 + 1tbsp agave nectar)
5 packets stevia + 1 tbsp agave nectar (or 1/4 + 1tbsp agave nectar)
2.5 mashed bananas
1/2 cup almond milk
2 tbsp flaxseed
1/2 cup 0% Greek yogurt
1/2 cup almond milk
2 tbsp flaxseed
1/2 cup 0% Greek yogurt
1 tsp banana extract (you can use vanilla)
1 tsp baking powder + 1/2 tsp baking soda1/2 tsp salt
1. Combine all ingredients (I'm not the kinda girl to tell you to seperate wet from dry, because let's be honest, I don't have any patience for that)
2. Preheat oven to 375 degrees.
3. Bake for 15-20 minutes or until they rise.

ReplyDeleteThese look terrific! I have been looking for a healthy muffin recipe since I bought muffin pan (4 months ago!) Ya think I could through in some blueberries too? The BF loves blueberry muffins (I just won't tell him all the healthy stuff is in there too!)
ReplyDeleteHey, a little extra flax never hurts haha! I love lemon poppyseed muffins & I always throw in a some blueberries and a powdered sugar glaze. Yum!
