Mozzarella and sun dried tomato PIZZZA!!


The other night, my family ordered pizza. To be honest, the deliciousness of it never is worth the bloatedness I feel afterwards. Yes, pizza is delicious, but its hard to just have one piece and I would much rather have MORE PIZZA for less calories, rather than less pizza for MORE CALORIES (well, that sentence was confusing, HA).

I came up with a delicious sun dried tomato pizza with fresh mozzarella. The star of the show? The tomatoes.

The benefits? (YES, gives you an excuse to indulge without guilt).
1. Contains vitamin C: which helps to prevent cell damage from free-radicals
2. Contains lycopene: a powerful antioxidant which helps prevent aging
3. Contains vitamin A: Helps with vision

What do you need?
1 low calorie-high fiber tortilla (I like Trader Joe's. They have about 130 calories)
3 sun dried tomatoes (in olive oil: you can find these at most grocery stores)
1/4 cup tomato sauce
1 tsp olive oil
1/2 clove of garlic chopped
1 oz sliced fresh mozzarella
Basil leaves

Preheat oven to 400 degrees.  Drizzle 1 tsp olive oil on tortilla and spread evenly with a spoon. Spread 1/4 cup tomato sauce on tortilla. Place basil leaves evenly over tortilla. Cut mozzarella thinly and place on tortilla. Top with chopped sundried tomatoes and garlic. Bake for 10 minutes.

  4. MMM that sounds amazing! I love making my own pizza--I like to use whole wheat pitas or ezekiel tortillas/wraps-YUM!!
    As far s toppings go...I like fresh pineapple, spinach, kale, cauliflower and broccoli, extra tomatoes, mushrooms, ANYTHING!!

  5. I do sometimes throw together pita pizzas like yours. I love them with onions, spinach and mushrooms - MM! Might have to make some soon now :)

  10. I know what you mean about feeling bloated after eating too much pizza. I really like making my own with Wal-Mart's great value pizza dough mix. You just add water and a Tbsp of olive oil and it makes a huge pizza with relatively low cals. You should check it out! Of course I load it up with tons of fresh veggies and pineapple :-)
